Healthy Carrot Domes with Gruyere Cheese
I have always had trouble feeding my toddlers vegetables. They seem to know what vegetables are and are very determined not to eat them whenever I feed them the usual vegetable meal daily. It has primarily become a problem in the household. So when my mother in law came to visit us, I was glad to learn this new meal that has rocked my kids’ worlds. She calls it Carrot Domes with Gruyere Cheese. Let me share it all the mothers out there. This can be very helpful for you. Here’s how to cook it:
Ingredients:
For the Carrot Domes
200g/7oz Carrot, grated
25g/1oz Butter
100g/4oz Potato, peeled and cubed
50g/2oz Gruyere Cheese, grated
2 small Eggs, beaten
Plain Flour
Other ingredients:
12 Baby Carrots, scraped
4 Sprigs of Basil
For the Tomato Coulis
50g/2oz Onion, finely chopped
1 Garlic Clove, crushed
50g/2oz Butter
1 x 400g/14oz Chopped Tomatoes
1 tbsp Tomato Purée
6 Basil Leaves
120ml/4 fl.oz. Vegetable Stock
Salt and Pepper
Instructions:
1. Make the tomato coulis by gently frying the onion and garlic in 25g/1oz of the butter until soft and transparent. Add the tomatoes, tomato purée, basil and stock and simmer for 15 minutes.
2. Meanwhile, boil the potatoes for 15 minutes or until tender. Drain and mash to a very smooth consistency.
3. Meanwhile, melt half the butter in a saucepan and gently fry the carrot for about 4 minutes.
4. In a bowl, mix together the carrot, potato, Gruyere and egg. Season with salt and pepper.
5. Dust 4 small ramekins with flour and fill each with the carrot mixture. Cover with clingfilm and steam for approximately 20 minutes.
6. Meanwhile, boil the baby carrots in salted water for 10 minutes or until just tender.
7. Whilst the carrots are cooking, pass the tomato mixture through a sieve then return to the pan and reduce slightly by boiling rapidly. Keep warm.
8. To serve - unmould the carrot domes onto individual plates, surround with the tomato coulis and garnish with the baby carrots and basil leaves.

Gruyere Cheese: Oh So Great Snack Partner
The skies are so blue and bright. The sun is warmly shining upon me while the wind was gently blowing my hair and caressing my skin. Indeed, it is a perfect day to go outdoors and appreciate the warm weather. It is a weekend and all members of the family are present. I'm sure they will be happy to go on a picnic and enjoy each other's company. This event will not be completed without the food to satisfy our tummies. So I've decided to make some Ham and Cheese sandwiches and Golden Gruyere Quesadillas. These are easy and quick snack recipes with Gruyere Cheese, my favorite snack partner. Gruyere, a hard Swiss cheese, is my favorite since the day I discovered it. Its rich and nutty flavor always makes me smile with satisfaction. This day, I want to share it with my loves ones. Who knows? It might become their favorite too. I informed my family that we are going out for a picnic in the afternoon. They were excited and told them to get ready as I prepare our snacks. I cooked the ham then thinly sliced Gruyere cheese to fill the sandwiches and add life on it. After making 10 pairs of ham and cheese sandwich, I proceeded to make the Golden Gruyere Quesadillas. I heated the frying pan and brushed a little butter into it in lieu of pam spray. I spread the flour tortillas and put the cheese and basil in the middle. I folded the tortillas looking like a sandwich and cooked it for a few minutes on each side until the tortilla turns light brown and the cheese melts. I carefully placed the food in the basket and told the family we are ready to go. We drove to the nearest eco-park in the area. We looked for the area fit to place our picnic cloth and basket. Everybody loved the Ham and Cheese Sandwiches and Golden Gruyere Quesadillas I prepared. They told me to make more of it at home. I am not mistaken when I presume that they will like it. We enjoyed the food with citrus juice and the beauty of nature at the same time. I guess there will be more family bonding coming and more Gruyere snack recipes to prepare in the future.
